Matcha Grades

As many of you may already know, there is no globally standardized definition for matcha grading terms such as "Ceremonial." At LILIKU TEA, we define each grade as follows to help café owners and private brand businesses select the best matcha for your customers.

Ceremonial

Ceremonial

Premium matcha for traditional preparation and high-end retail. It offers a smooth, umami-rich taste with natural sweetness. Ideal for tea ceremonies, direct whisking, or luxury private-label offerings.

Umami: ★★★★★
Astringency
Harvest 1st Flush
Milling Method Stone-milled

Suggested Use
✓Koicha
✓Usucha
Drink

Drinks

Perfect for matcha lattes, iced matcha, and blended drinks. Balanced in flavor and vibrant in color, this grade dissolves smoothly in milk or plant-based alternatives. A great choice for cafés and drink-focused brands.

Umami: ★★★★
Astringency ★★
Harvest 1st/2nd Flush
Milling Method Stone or Machine milled

Suggested Use
✓Latte (Hot/Cold)
✓Cocktails
✓Ice Cream

Bake

Bake

Ideal for baking and confectionery.
This matcha has a bold, slightly bitter taste and is designed to hold its flavor even when mixed with other ingredients. Recommended for culinary professionals and food product developers.

Umami: ★★★
Astringency ★★★
Harvest 2nd Flush
Milling Method Machine milled

Suggested Use
✓Cakes
✓Pastries

The Suggested Use is simply a guideline. For example, when making a latte with rich, high-fat dairy milk, the Bake Grade may actually provide a better balance, as its stronger bitterness can stand up to the richness of the milk. Let us know what kind of product you’d like to offer your customers—we’re here to help you choose the right matcha.
